Stuffed Peppers

Stuffed peppers…always a crowd pleaser!!! This is another one of my go-to recipes when I’m having company over for dinner.

Stuffed Peppers

Ingredients

  • 1 pound ground beef, cooked
  • 1 1/2 cups cooked white rice
  • 1 cup water
  • 6 green bell peppers
  • 2 (8 ounce) cans tomato sauce
  • 1 tablespoon Worcestershire sauce
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • 1 cup of cheddar cheese, or 6 cheese slices

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Remove and discard the tops and insides of the bell peppers. Submerge peppers in a pan of boiling water for 4 minutes.
  3. In a large skillet on medium heat, mix the browned beef, cooked rice, 1 can tomato sauce, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Spoon an equal amount of the mixture into each of the peppers. Mix the remaining tomato sauce and Italian seasoning in a bowl, and pour over the stuffed peppers. Top with cheese
  4. Bake for 30 minutes.

Homemade Egg Rolls! So easy…who knew?!

I never knew how easy it was so make egg rolls! Since the hubby is on a gluten-free died just about anything that is fried is a no-go! So I miss egg rolls. This recipe is how to make homemade egg roll wrappers, they only take a few minutes and you probably already have all the ingredients. You make them just like you would crepes. Pour just enough batter into the bottom of a pan to cover it. I filled mine with veggies and chicken. Delish!

Egg Roll Wrapper Recipe

Ingredients

  • 1 egg, beaten
  • 3/4 very cold water
  • 1 cup flour
  • dash of salt

Instructions

  1. In a medium bowl, whisk together egg, cold water and salt. Mix in all-purpose flour 1/3 at a time. Allow the mixture to stand 15 minutes at room temperature.
  2. Heat a wok over high heat. Remove from heat and spray with oil. Reduce heat to low. While wok is still warm, pour about 1/4 cup of batter into pan and move it around until it covers the bottom. Rotate wok quickly to spread an even layer of batter. Cook over low heat 45 seconds to 1 minute, until bottom is golden brown and edges begin to curl. Carefully remove from heat and place on a paper towel, golden brown side down.
  3. Let wraps cool. Fill and then roll up. Fry in oil for a few minutes on each side until they reach desired crispiness and color!

Kitchen Tip: How to make your wooden spoons last longer!

Here’s a kitchen tip to help your wooden spoons last long!  Do not wash in dishwasher. (wait, I have to wash them by hand?!) Wash with warm soapy water, pat dry. The Dishwasher will make them break down quicker. I never knew this. I bought a nice big fat wooden spoon recently and it already looks worn out and has a crack down the middle! Now I know better, don’t be lazy by throwing them in the dishwasher!

Want to season them? Wipe them with Olive Oil and bake them in the oven at 350!

Easy Stir Fry Sauce

This is one of my favorite Stir Fry Sauces to make. It’s really easy to make and I normally have the ingredients in stock in the pantry.

As many of you know most of what I make is gluten-free. This recipe can easily be made gluten-free. Just make sure you check the soy sauce. Many of them contain wheat. As long as your soy sauce is gluten-free then the rest of the ingredients are naturally gluten-free!

Easy Stir Fry Sauce

Ingredients

  • 1/3 Cup Ketchup
  • 1 Cup Sugar
  • 1 Cup White Vingear
  • 2 TBS Soy Sauce
  • 2 tsp Garlic Powder

Instructions

  1. Put all the ingredients in a sauce pan and heat until boiling. Then reduce heat and simmer for 10 minutes.
  2. Add to your favorite veggies and/or meat. Pour over rice.
  3. Enjoy!

Slow Cooker Balsamic Glazed Pork Tenderloins

Balsamic Pork tenderloin

OK I’m just going to warn you know. Apparently my family was so hungry from smelling what I cooked tonight that they forgot I needed to take a picture before they dove into the pork so you are getting a picture of a half eaten Balsamic Glazed Pork Tenderloins. LOL.

Slow Cooker Balsamic Glazed Pork Tenderloins

Ingredients

  • 2 pork tenderloins (I used the Hormel Always Tender tenderloins)
  • 3 cloves of garlic (pressed)
  • 1 cup of water
  • 2 tsps of sage
  • 1/2 cup of brown sugar
  • 1 tsp of salt
  • 1/2 tsp of ground black pepper
  • 1/4 cup of balsalmic vinegar
  • 2 tbsp of soy sauce
  • 1 tbsp of corn starch
  • 1 Reynolds slow cooker liner

Instructions

  1. Place slow cooker liner in bag
  2. Add both tenderloins to bottom of slow cooker side by side (rinse of tenderloins first)
  3. Rub salt, pepper and sage over the top of both tenderloins.
  4. Pour 1/2 cup of water in to the bottom of the slow cooker.
  5. Add the pressed garlic to the bottom as well.
  6. Cover slow cooker and cook on low for 6 hours.
  7. Now mix cornstarch,balsamic vinegar, brown sugar and soy sauce in a microwave safe bowl and microwave for at least 1 minute. Whisk and place in microwave for an additional minute to thicken sauce. Pour 1/2 of glaze over tenderloins and cook for an additional 1 to 2 hours.
  8. I use the remaining glaze to pour over the top once the tenderloin is plated.
