This Sweet Baked Beans Recipe is a southern tradition in my household. My mom has been making this simple recipe since I was a little girl and now I am making it for my family. Of course the way my mom made was a dash of this and a dash of that, she of course never measured anything. I finally got her to sit down and figure out the measurements so that I could share it with you. Ingredients
  • 3 cans of pork and beans
  • ½ cup - 1 cup of brown sugar to taste (I like to use 1 cup)
  • 3 tbsp of ketchup
  • 3 tbsp of brown sugar or honey bbq sauce
  • ¼ cup diced red onion
Instructions
  1. Drain 1 out of the 3 cans of pork and beans.
  2. Mix all of the ingredients together
  3. Bake in in the oven for 45 mins at 350 degrees

Chocolate Eclair Cake Recipe

This Chocolate Eclair Cake Recipe has always been a favorite of mine. I asked my friend Michelle at church if I could have her recipe and I was so delighted when she said yes. It’s so easy to make and it doesn’t even require you to turn on your oven! We had my mom over for Memorial Day and this was a special treat. Just be careful if you cover it in the fridge that the frosting doesn’t stick to the lid or foil or it will all come off when you open it back up. Chocolate Eclair Cake Recipe

Ingredients
  • 1 Box of Honey Grahams
  • 1 8ox Cool-Whip
  • 2 small boxes of French Vanilla Pudding
  • 3½ cups of Milk
  • Frosting:
  • 3 tbsp nestle cocoa
  • 3 tbsp of margarine
  • 2 tsp white karo syrup
  • 2 tsp vanilla
  • 1 1.2 cups powdered sugar
  • 3 tbsp milk
  • 1 tbsp vegetable oil
Instructions
  1. Mix together pudding and milk for 2 minutes. Blend in cool-whip. Line 9x13 pan with whole crackers. Pour ½ of the mixture onto crackers. Make 2nd layer of crackers and pour remaining mixture on top. Make 3rd layer of crackers and frost.
  2. Mix all of the frosting ingredients in a bowl and frost the top layer. Then chill in the refrigerator overnight.

I used a couple of the tools Good Cook sent to create these One Pan Lettuce Wraps. I have to say, these are out of this world good! I’ve already made them twice! They are perfect Summer comfort food!

Ingredients
  • 1- 1½ lbs boneless skinless chicken
  • ¼ cup soy sauce
  • ¼ cup plus 2 T sesame oil
  • 2 T honey
  • 2 T minced garlic
  • ¼ cup peanuts or cashews
  • 1-2 heads of lettuce
Instructions
  1. Cut the chicken into small bite sized pieces.
  2. In a large pan or wok heat 2 tablespoons of the sesame oil over medium high heat. Add chicken, stir frequently until chicken is starting to brown and add garlic.
  3. In a small bowl combine the soy sauce, sesame oil and honey. Mix together and add to the chicken. Add peanuts. Cook for 2 minutes and remove from heat.
  4. Spoon chicken mixture into lettuce leafs and enjoy!

These are by far my favorite potatoes to make! So easy and tasty! Anyone can make them! They are perfect for a side dish, pot luck, picnic….you get the idea!

They are as easy as 1,2,3

1. Wash and cut potatoes

2. Toss potatoes, olive oil and ranch mix together.

3. Bake

And then eat…so I guess technically there are 4 steps…but who’s counting!!

Zucchini Fritters

zucchini fritters Summer is just around the corner…and you know what that means?! Farmer’s Markets and fresh food!! I love summer veggies! I can’t wait to get my hands on them! Here’s a great recipe for zucchini. I’ve made these many times and they are always a hit. These Zucchini Fritters are crunchy on the outside but the inside is very moist. They make a great side dish for a picnic or add some shredded chicken and they would make a great main dish! Enjoy!

Zucchini Fritters

Ingredients
  • 1-1½ lbs of shredded zucchini, about 3 zucchinis
  • 1 egg
  • ⅓ cup flour
  • 1 Tablespoon cornstarch
  • 1 Tablespoon Lemon Pepper Seasoning
  • oil for cooking
Instructions
  1. Shred/Grate zucchini and try to remove as much moisture as possible. Place on a kitchen towel and press out water.
  2. Place zucchini in a bowl. Add in the remaining ingredients and mix together.
  3. Heat oil in a frying pan over medium heat. Scoop approximately ¼ cup of mixture into the oil. Flatten slightly so it looks like a patty. Let cook for about 4 minutes or until browning, flip and cook on the other side for another 4 minutes.
  4. Serve Warm. Enjoy!

Easy Oreo Balls

Easy Oreo Balls

Ingredients
  • 1 regular package original Oreo cookies
  • 1 (8 ounce) package cream cheese, softened 
  • 2 cups Semi Sweet Chocolate Chips (or other good quality chocolate, broken into pieces)
  • ½ TB Crisco (shortening) 
  • 2-3 TB white frosting (from a can, works best!)
Instructions
  1. Break Oreos into a food processor, and process until they turn into fine crumbs.
  2. Mix Oreos and softened cream cheese together until well blended.  Place bowl in freezer 
  3. for 20-30 minutes (this helps with next step).
  4. Roll Oreo mixture into walnut size balls, and place on waxed paper on cookie sheet.  
  5. Freeze for an hour.
  6. Melt chocolate and shortening in double boiler.
  7. Dip Oreo balls in chocolate and place on wax paper to harden (I tilt pan on angle, and use 
  8. 2 forks to dip/roll).
  9. Melt white frosting in microwave at half power until the desired consistency is reached.  
  10. Put into a small plastic sandwich sized bag, snip the end, and drizzle over Oreo Balls. 
  11. Keep refrigerated until ready to eat.
  12. Wallah!  Super easy gorgeous treats that taste like chocolate truffles!
