Jalapeno Cornbread


  • 3/4 cup buttermilk
  • 1/2 teaspoon baking soda
  • 1/2 cup corn oil
  • 1 (8.25 ounce) can cream-style corn
  • 2 jalapeno peppers, minced
  • 1 cup yellow cornmeal
  • 3 eggs
  • 3 ounces shredded Cheddar cheese
  • 1 teaspoon salt


  1. Move your oven rack to the center position in oven and preheat oven to 400.
  2. Mix buttermilk, cream-style corn, eggs, cornmeal, corn oil, Cheddar cheese, baking soda, jalapeno peppers and salt in a large mixing bowl.
  3. Melt butter in a 9-inch square baking dish for 2-3 minutes.
  4. Pour batter into the baking dish on top of the butter
  5. Bake for 35 minutes or until golden brown.

I think that I have a slight love affair with caramel. It’s my favortie choice when I get to choose an ice cream topping…step aside hot fudge! So when I saw these new Milk Way Simply Caramel Bites while I was shopping at Walmart I thought they would be heavenly….and I was right! You can find these little treasures down the candy aisle.

After I got home from grocery shopping I ripped open the bag. I don’t what it is about grocery shopping that makes me fiercely hungry by the time I get home?!

These little bites were like Caramel Heaven in my mouth. I know I could have easily eaten the whole bag, so I had to walk away and finish putting up the groceries.

Later on I was in charge of the treat for family night. I came up with a great recipe to make Milky Way Caramel Chow. It was fabulous! The caramel and chocolate melted together perfectly. Then I tossed it with corn squares cereal, topped it off with some powdered sugar and it made a finger-licking good snack! It was gone fast! Luckily it’s easy to make some more!

Milky Way Caramel Chow


  • 1 7oz bag of Milk Way Simply Caramel Bites
  • 1/4 Cup butter
  • 4 Cups Corn Squares Cereal
  • 1 Cup Powdered Sugar


  1. Measure out 4 cups of the cereal and place in a large bowl, Set aside.
  2. In a sauce pan melt the butter over medium heat. Once is it almost melted add the Milky Way Caramel Bites. Stir Constantly. These will melt quickly and you don't want to it to burn.
  3. Once completely melted slowly pour the mixture over the cereal. Stir until the chocolate mixture is covering the cereal.
  4. Start sprinkling with the powdered sugar, stir, sprinkle, stir...you get the picture.
  5. Put it in the fridge to set. Then Enjoy!!

French Toast Muffins with Pecan Streusel Topping

If you haven’t been able to tell yet, I am a HUGE fan of breakfast. I’ve always loved breakfast food the most, even when I was a picky eater child. I often make breakfast for dinner…my kids have nicknamed it brinner, I’m sure it will catch on soon!

These French Toast Muffins are easy to make and delicious to eat! They are perfect for breakfast, brunch or brinner! The real winner here is the Pecan Streusel Topping.

French Toast Muffins with Pecan Streusel


  • Muffins:
  • Aprox 10 pieces of bread or a loaf of French bread cut into small bite-sized pieces
  • 2 1/2 cups milk
  • 6 large eggs
  • 1/2 cup brown sugar
  • 1 tablespoon vanilla
  • 1 teaspoon ground cinnamon
  • Topping:
  • 1/4 cup cold butter
  • 1/4 cup brown sugar
  • 1/4 cup flour
  • 1/8 teaspoon ground cinnamon
  • 1/4 cup pecans, chopped


  1. In a medium bowl whisk together the eggs, milk, cinnamon, vanilla and sugar.
  2. Grease 12 muffin tins and fill them with bread chunks. You may have enough to make more.
  3. Start pouring the batter over the bread. You may have to push on the bread to make sure it all gets covered in the egg mixture.
  4. Cover and let put in the fridge for at least 2 hours or over night.
  5. To make the streusel topping put the butter, sugar, flour and cinnamon in a medium bowl. Using 2 butter knives or a pastry cutter start cutting the butter up and mixing it in with the rest of the ingredients. Mix in the pecans.
  6. Sprinkle the streusel over the top of the muffins. Bake at 350 degrees for 25 minutes.
  7. Enjoy!!!

Here’s a great tip! It’s so simple. So genius! Grab one can of frosting, choose vanilla or another plain flavor and add one packet of Koolaid…that’s it! It will add great color and flavor.

This frosting is great for cookies and cakes. I used a pink lemonade flavor on some sugar cookies and it was fabulous! The possibilities are endless!

Sweet Pork in the Crock Pot

This is one of my FAVORITE recipes. It’s easy to make and it’s only 4 ingredients!! I make this when I have to feed a crowd. Just dump everything in the slow cooker and that’s it.

Sweet Pork is very versatile. You can use it in tacos, rice bowls, burritos, salads….getting hungry yet?!

Sweet Pork in the Crock Pot


  • Boneless Pork Roast- Between 2-4 lbs
  • 1 Can of Cola, I like Dr. Pepper
  • 1 Cup Salsa
  • 1 Cup Brown Sugar


  1. Place the roast in your slow cooker.
  2. In a medium bowl mix the rest of the ingredients together and then pour over the roast.
  3. Cook on low for about 7-8 hours or high for about 4-5 hours. The meat should be able to easily shred at this point. It's ready to eat!
  4. Enjoy
