Cocoa Pebbles Treat

Since about 90% of the food that I makeis gluten free, I get asked alot of questions from friends and family. One thing everyone always wants to know is what a good gluten free dessert is. Cocoa Pebbles Cereal is gluten free, so we make treats out of them! Everyone love them! Simple Gluten Free Dessert!


Auto Draft


  • 1/4 cup butter melted
  • 1 package of mini marshmallows
  • 8 1/2 cups Cocoa Pebbles
  • I covered mine with melted chocolate chips and sprinkles!


  1. Melt butter in a microwave safe bowl for 45 seconds on HIGH.
  2. Stir in marshmallows to coat. Microwave on HIGH for 11/2 minutes.
  3. Stir again to make sure all the marshmallows are melted.
  4. Stir into Cocoa Pebbles and press firmly into a parchment paper lined 9x13 inch pan. Cut into 24 squares, serve and enjoy!

Dueling Lobster Tails


  • Crab Stuffing
  • 2/3 cup crab meat
  • 2/3 cup cheese and Garlic croutons (crushed) or any flavored pre-made crouton that you can find at your local grocery store
  • 1/4 cup. prepared Alfredo sauce
  • 1 tsp. fresh lemon juice
  • 1/2 tsp. salt-free all-purpose seasoning

  • Garlic Butter Sauce

  • You can prepare this sauce at home or can use prepared garlic butter from your local grocery store
  • 1/4 cup butter
  • 1/8 cup olive oil
  • 1/2 tsp. minced garlic
  • 1/2 tsp. salt
  • 1/8 cup fresh parsley
  • 1/4 tsp. pepper
  • 1/2 lemon, juice of

  • Stuffed Lobster Tails

  • 4 Maine lobster tails
  • Your crab stuffing mixture
  • Garlic butter sauce
  • 1/4 cup Monterey Jack cheese


  1. Preheat oven to 425 degrees

  2. Prepare Crab Stuffing:

  3. In a large bowl, combine crab meat, crushed croutons, Alfredo sauce, lemon juice and all-purpose seasoning.
  4. Set aside for later.

  5. Prepare garlic butter Sauce:

  6. In skillet, heat together butter and olive oil and sauté garlic.
  7. Add lemon juice, salt, pepper and parsley. Continue cooking for a few minutes.
  8. Set aside for later.

  9. Cut Lobster Tail:

  10. With a sharp knife or kitchen shears, cut completely through Maine lobster tail from base of flippers to the top. Do not cut through flippers.
  11. Break open last shell segment closest to the tail and roll the two sides outward to open lobster.
  12. Remove vein. If necessary, use a pan of ice water to remove veins from the meat.
  13. Gently lift meat from shell leaving meat attached at tail end. This keeps meat from sticking to shell when cooked and makes it easier to eat.
  14. Place meat back into shell.
  15. Repeat with other lobster tails.

  16. Stuff Lobster Tail:

  17. Place Maine tails in a square glass baking dish or on a baking sheet.
  18. For each tail, split crab stuffing into four equal portions. and shape stuffing in an oval shape similar to the opening between the two halves of the tail.
  19. For each tail, gently place stuffing on the opening from tail to end, having it sit up a little, and keeping the stuffing off the lobster meat. Do not press stuffing into the cavity.
  20. For each tail, brush stuffing and lobster meat evenly with garlic butter.
  21. For each tail, split cheese into four equal portions and place the Monterey Jack cheese on top of the stuffing only, ensuring that the lobster and stuffing are evenly covered.

  22. Bake Lobster Tail:

  23. Bake the lobster tails in the preheated oven until the meat is opaque and the stuffing is golden brown on top, 10 to 12 minutes. An instant-read thermometer inserted into the thickest part of the lobster tail should read 145 degrees F (65 degrees C).
  24. Serve with melted butter and lemon

  • 3/4 cup buttermilk
  • 1/2 teaspoon baking soda
  • 1/2 cup corn oil
  • 1 (8.25 ounce) can cream-style corn
  • 2 jalapeno peppers, minced
  • 1 cup yellow cornmeal
  • 3 eggs
  • 3 ounces shredded Cheddar cheese
  • 1 teaspoon salt


  1. Move your oven rack to the center position in oven and preheat oven to 400.
  2. Mix buttermilk, cream-style corn, eggs, cornmeal, corn oil, Cheddar cheese, baking soda, jalapeno peppers and salt in a large mixing bowl.
  3. Melt butter in a 9-inch square baking dish for 2-3 minutes.
  4. Pour batter into the baking dish on top of the butter
  5. Bake for 35 minutes or until golden brown.

I think that I have a slight love affair with caramel. It’s my favortie choice when I get to choose an ice cream topping…step aside hot fudge! So when I saw these new Milk Way Simply Caramel Bites while I was shopping at Walmart I thought they would be heavenly….and I was right! You can find these little treasures down the candy aisle.

After I got home from grocery shopping I ripped open the bag. I don’t what it is about grocery shopping that makes me fiercely hungry by the time I get home?!

These little bites were like Caramel Heaven in my mouth. I know I could have easily eaten the whole bag, so I had to walk away and finish putting up the groceries.

Later on I was in charge of the treat for family night. I came up with a great recipe to make Milky Way Caramel Chow. It was fabulous! The caramel and chocolate melted together perfectly. Then I tossed it with corn squares cereal, topped it off with some powdered sugar and it made a finger-licking good snack! It was gone fast! Luckily it’s easy to make some more!

Milky Way Caramel Chow


  • 1 7oz bag of Milk Way Simply Caramel Bites
  • 1/4 Cup butter
  • 4 Cups Corn Squares Cereal
  • 1 Cup Powdered Sugar


  1. Measure out 4 cups of the cereal and place in a large bowl, Set aside.
  2. In a sauce pan melt the butter over medium heat. Once is it almost melted add the Milky Way Caramel Bites. Stir Constantly. These will melt quickly and you don't want to it to burn.
  3. Once completely melted slowly pour the mixture over the cereal. Stir until the chocolate mixture is covering the cereal.
  4. Start sprinkling with the powdered sugar, stir, sprinkle, get the picture.
  5. Put it in the fridge to set. Then Enjoy!!

French Toast Muffins with Pecan Streusel Topping

If you haven’t been able to tell yet, I am a HUGE fan of breakfast. I’ve always loved breakfast food the most, even when I was a picky eater child. I often make breakfast for dinner…my kids have nicknamed it brinner, I’m sure it will catch on soon!

These French Toast Muffins are easy to make and delicious to eat! They are perfect for breakfast, brunch or brinner! The real winner here is the Pecan Streusel Topping.

French Toast Muffins with Pecan Streusel


  • Muffins:
  • Aprox 10 pieces of bread or a loaf of French bread cut into small bite-sized pieces
  • 2 1/2 cups milk
  • 6 large eggs
  • 1/2 cup brown sugar
  • 1 tablespoon vanilla
  • 1 teaspoon ground cinnamon
  • Topping:
  • 1/4 cup cold butter
  • 1/4 cup brown sugar
  • 1/4 cup flour
  • 1/8 teaspoon ground cinnamon
  • 1/4 cup pecans, chopped


  1. In a medium bowl whisk together the eggs, milk, cinnamon, vanilla and sugar.
  2. Grease 12 muffin tins and fill them with bread chunks. You may have enough to make more.
  3. Start pouring the batter over the bread. You may have to push on the bread to make sure it all gets covered in the egg mixture.
  4. Cover and let put in the fridge for at least 2 hours or over night.
  5. To make the streusel topping put the butter, sugar, flour and cinnamon in a medium bowl. Using 2 butter knives or a pastry cutter start cutting the butter up and mixing it in with the rest of the ingredients. Mix in the pecans.
  6. Sprinkle the streusel over the top of the muffins. Bake at 350 degrees for 25 minutes.
  7. Enjoy!!!
