Rudi’s Gluten-Free Bakery Giveaway on their Facebook!

As I have said before, most of the food that I cook are gluten-free. It’s been about a year since my husband was diagnosed with Celiac disease. I’ve had to learn a whole new way of cooking and baking! It’s so nice when you can find products that are gluten free and don’t taste like dried up cardboard!

Red Gold is a private, family owned company deeply involved with all things tomatoes from the growers to the president and his family. They started in the 1940s with the firm belief and evidence that the Midwest produces the best tasting tomatoes (the winters are great to break up the soil just right for tiny root systems and its climate is perfect for growing and flavor) .

It’s harvest time in Indiana, and Red Gold is currently harvesting. In a little under an hour, each load is ready for quick transport to its canning facility and then to people’s tables. They are canned within 24 hours of coming from the field.

SIMPLE ITALIAN SKILLET DINNER
Recipe Overview:
Servings: 6
Preparation Time: 10 minutes
Cook Time: 20 minutes

Ingredients
1 pound Italian sausage
1/2 cup chopped green bell pepper
1 medium onion, chopped
1 (14.5 ounce) can Red Gold Diced Tomatoes
or 1 (14.5 ounce) can Red Gold Petite Diced Tomatoes
2 cups Red Gold Vegetable Juice From Concentrate
1 1/2 cups instant white rice
1 cup (4 ounces) shredded mozzarella cheese

Directions:
In large skillet cook sausage until no longer pink, 4 to 6 minutes. Drain off excess fat. Add green bell pepper and onion; cook until crisp.
Add RED GOLD DICED TOMATOES and RED GOLD VEGETABLE JUICE; cook and stir until mixture boils. Remove from heat and stir in rice.
Cover and let stand 6 to 8 minutes or until liquid is absorbed. Sprinkle with cheese; cover and let stand until cheese is melted

Closed: Barber Foods Stuffed Chicken

At our house we tend to eat a lot of chicken.  I think we have made chicken just about every way possible (at least every way I know how to prepare it!)  So When Barber Foods asked if we wanted to try their stuffed chicken, we jumped at the chance!

We tried the Stuffed Chicken Cordon Bleu and the Stuffed Chicken Parmesan.  Both varieties were amazing!  The first thing you notice when you cut into them to start eating, is that they do not skimp on the stuffing.  It’s not just a thin layer of stuffing inside a chicken.  It’s a big gooey pocket of awesomeness!  They taste just as awesome too!  The only problem I had was my kids wanted me to make more!

So you need to give Barber Foods Stuffed Chicken a try.  It’s a perfect way to change up your dinner menu.  They have several other varieties to choose from to make everyone happy.
