When I saw this recipe in Emeril’s New Kicked-Up Sandwiches Book, I knew I had to try it and fast! I still had a few tomatoes left in the garden and this sandwich needs to be done with fresh summer tomatoes. So this was my sandwich as I said goodbye to summer! Yes, it’s simple. But it was fresh and crisp. The special mayo blend made all the flavors come together! Hmmmm!
