My Great Grandma’s Zucchini Cake…you know it has to be good!

This is my Great Grandma Virginia Muir’s recipe! She died when I was young but I still have some great memories of her. She was an amazing lady. Here is her recipe for Chocolate Zucchini Cake. You know it’s good if it’s been passed down the generations!

My Great Grandma’s Zucchini Cake…you know it has to be good!

Ingredients

  • 1 stick butter (softened)
  • 1/4 cup oil
  • 1 3/4 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 cup buttermilk
  • 2 1/2 cup flour
  • 4 tablespoons cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon cloves
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 cups shredded zucchini
  • 1/2 cup chocolate chips
  • 1/2 cup nuts

Instructions

  1. Cream together the butter, oil, sugar.
  2. Add the eggs, vanilla and milk.
  3. Slowly mix in the flour, cocoa, baking soda, cloves, cinnamon, salt and zucchini.
  4. Pour in a greased 13x9 pan.
  5. Sprinkle the chocolate chips and nuts on top.
  6. For a metal Pan bake at 350 degrees for 40 minutes. For a glass pan bake at 325 degrees for 45 minutes.
