Looking to add a new vegetable to your menu? Spring peas are rich in vitamin C and B as well as protein and fiber. They cost less than 35 cents per serving. This would be great to add to your summer garden. If you plan on using them in a recipe you’ll need to keep in mind that 1 pound of peas in their pods will yield about 1 cup of shelled peas (about 6ounces). the 3 most common peas are english peas,snow peas and sugar snap peas.

If you plan on purchasing in the store you will want to avoid over-sized or yellow pods. Peas should be bright green firm and crisp. You will also want to make sure they are compact. Once bought or picked you will want to make sure you use them at their freshness.

  • Snow peas & sugar snaps – can last up to 3 days in the refrigerator
  • English peas – need to be eaten within a day or two

Peas are pretty low in calorie compared to beans and would make a great substitute. You will get about 81 calories in 100 grams of peas and there is no cholesterol.
