Easy 2 Ingredient Gluten Free Pancakes!

May is Celiac Awareness month. Celiac disease is an immune disease in which people can’t eat gluten because it will damage their small intestine. Gluten is a protein found in wheat, rye, and barley. My husband was diagnosed with Celiac disease about a year and a half ago. I didn’t know what I was going to do to. It seemed liked everything we ate had gluten in it. We had to change our eating habits and make new adaptions to our diet.

Here is one recipe that I’ve found that I love. It’s so simple…2 ingredients! It doesn’t require any special flours. The choices for gluten free cereals are limited and buying special pancake mixes can be expensive. So if you are on a gluten free diet, looking for a low carb option, or just love the simplicity of two ingredients; I’m sure you’ll love this recipe!

2 Ingredient Gluten-Free Pancakes

Ingredients

  • 2 Eggs
  • 2 Ounces Cream Cheese (Softened)

Instructions

  1. In a blender, combine eggs and cream cheese until smooth.
  2. In a small pan over medium heat add about 2 tablespoons of batter. Let cook for 30 seconds or until bottom is brown. Flip and let cook for an additional 30 seconds.
  3. Enjoy!
