On a family trip to Branson we found some amazing garlic infused olive oil. So when we got back home we wanted to find different ways to use it. One of the ways was this simple recipe for roasted red potatoes. If you don’t have garlic infused olive oil you can use regular olive oil too. Enjoy!
Ingredients
- 2lbs of red potatoes
- garlic infused olive oil (You can use regular olive oil)
- salt
- pepper
Instructions
- Preheat oven to 425
- Cut the potatoes into quarters, or smaller if potatoes are big and put them into a bowl
- Drizzle olive oil over potatoes and mix to coat
- Arrange potatoes in a single layer on baking sheet
- salt and pepper - more or less depending on your taste
- cook on 425 for 30 minutes or until brown

Mmmm…I’m making baked ham for dinner tonight and wanted something other than mashed potatoes…again. I think I’ll try these and since I don’t have garlic infused oil, maybe I’ll grate garlic into it!?:) Thanks for the idea!
